Healthy, Convenient Work Lunch

I never eat fast food for lunch. Been there, done that. It only makes you fall asleep at your desk and feel gross. And…it can get expensive! It’s also annoying to try and pick a place/waste time driving during your precious lunch hour. Sunday is my shopping day. I usually buy s salad base (baby kale, spinach or spring mix). Tons of veggies (bell peppers, cucumbers, mushrooms, tomatoes, zucchini, eggplant). Than toppings (chickpeas, canellini beans, roasted red peppers, etc). I add the base and my chopped veggies, some toppings and red wine vinegar/EVOO with herbs chopped from my garden. If I plan in advance, it doesn’t take a lot of effort, just prep work on Sunday. This week…I was crazy busy I just didn’t have the patience or time. Instead of saying ehhhh forget it, I’ll just buy fast food all week!! I went to Trader Joe’s and bought a bunch of their $3.99 salads. Much cheaper than a value meal, Salad Works, Panera, etc. They are soooo delicious! My favorite is the arugula one bc I looooooooove Israeli pearl couscous. It comes with this spicy Pimiento Dressing that is absolutely delish! That combined with the peppery arugula, is a treat I look forward to eating! When I feel like a need a break from preparing lunch, this is what I turn to! I put them in a bag along with: Greek yogurt with a banana, an apple, fiber one bar, mama chia squeeze (Costco), fresh berries and almonds.
